Lock 27 Brewing is a GABF Award-Winning brewery founded and located in Ohio, with a production brewery at our Taproom in the Water Street District of Dayton and a small-batch R&D brewing system at our Restaurant in Centerville. Lock 27 Brewing has an exciting development opportunity for a passionate Chef to manage the culinary program in our restaurant location. The ideal candidate will be looking to learn the business side of running a restaurant with the ultimate goal of owning their own establishment. Lock 27 Brewing will work with the candidate beyond day-to-day operations and educate/guide them on the skills to successfully found and run their restaurant. In return form the business management experience we offer, the candidate will run our scratch kitchen for a period of approximately one year.

Successful candidates should be established leaders with great organizational and time management skills. Top candidates will have extensive kitchen experience as a Chef and be looking to tune their entrepreneurial spirt.


Qualifications and Education Requirements:

  • Culinary school degree/diploma.
  • Experience as a working chef.
  • Advanced knowledge of the culinary arts.
  • Perfectionism in sanitation and quality control.
  • Portfolio of creative, unique dishes.
  • Expert multitasking ability.
  • Great leadership and interpersonal skills.
  • Ability to run stocktaking and place orders for resupply.
  • Exemplary work ethic in a high-pressure environment.
  • Passion and pride for delighting people with food.

Responsibilities and Duties of Role

  • Ensuring quality of food and service.
  • Preparing/costing/marketing 3-5 “feature dishes” each week in a brewpub environment.
  • Overseeing all kitchen operations.
  • Coordinating kitchen staff and assisting them as required.
  • Training staff to prepare and cook all the menu items.
  • Taking stock of ingredients and equipment and placing orders to replenish stock.
  • Enforcing safety and sanitation standards in the kitchen.
  • Receiving feedback and making improvements where necessary.
